Avondale Chenin Blanc - South Africa.

A very “un-Chenin-like” Chenin Blanc, made to be enjoyed on its own or with light salads. This is not a showy wine, but an extremely drinkable wine with higher acid to add zippiness and zest. And do not forget to look out for the Sauvignon Blanc characteristics of this wine

Badger Mountain Riesling - Washington State.

Honeyrun Mead – California.

This is a VERY DRY AND SIMPLE Mead, made by fermenting honey with no fruit and no sulfites and almost no residual sugar. Ours is a lot less sweet than most meads, and should go well with fish and hors d'oeuvres. We have noticed that people who like beer tend to like this wine, and those who LOVE our sweet Blackberry might NOT like this dry Mead. And be warned; Mead generally throws a sediment and gets cloudy. We have not overcome this, but we have found the flavor of our Mead to be unaffected by the sediment.

Honeyrun Cherry – California.  No sulfites or preservatives added! Kosher.

Like cherry pie; this is HoneyRun's sweetest variety. Try it chilled before or after dinner, or with creamy (non-blue) cheeses and crackers. Simmer pears in it, mix it into whipped cream icing.
Cherry Honeywine should retain its fruity flavor for 6 months to a year, or longer if kept cool i.e. cellar temperature. We have enjoyed some bottles of aged cherry honeywine; it took on a mature less fruity flavor.

Honeyrun Blackberry – California.  No sulfites or preservatives added! Kosher.

Great blackberry flavor with a kiss of honey. Try it chilled before or after dinner, with dark chocolate. Our Summer favorite: put ice in the blender, cover it with Blackberry Honeywine, blend and serve.
This wine should retain its fruity flavor for 6 months to a year, or longer if kept cool i.e. cellar temperature. We have enjoyed some bottles of 3 and 4 year old blackberry honeywine; they matured into wine that was less fruity and more port-like.

Honeyrun Elderberry – California.  No sulfites or preservatives added! Kosher.
This wine is more like a grape wine than HoneyRun's other varieties, and is on the sweet side. It has been refered to as "instant port" by numerous tasters. Our winemaker enjoys Elderberry Honeywine with chicken, tangy salads, and by itself.
Elderberry Honeywine should retain its fruity flavor for up to a year, or longer if kept cool i.e. cellar temperature. I have tried bottles now that were kept under the stairs for two years, and they were fabulous! We still have not discovered how long before Elderberry goes over the hill.

Knobloch Pinot Gris (Opal) – Germany.

Knobloch Piont Noir (Ruby) – Germany

Winemaker's Notes: Our range of red and white wines is well-balanced. Modern-style fruity white-wines and classical red wines, matured in wooden barrels, in accordance with age-old tradition.

About Klaus Knobloch

Since 1988 we have been working according to the guidelines laid down by ECOVIN, the Federal Wine Growers' Association. Amongst other things, this means that we have abandoned the use of chemical-synthetic additives in fertilisation and pest management. With 70 hectolitre per hectare, the output is far below the norm, but the grapes make up for it, with their significantly better quality. We are completely convinced that organic wine-growing is best for us as well as for our products.

Stellar Merlot – South Africa.

Once again Merlot in our area has not disappointed. The vines give fruit with excellent colour and taste. Grapes come from all our farms around the Olifants river. As with the Cabernet, the crushed grapes are given at least two days cold-soak, before the fermentation is started. Fermentation temperatures are kept below 250C. The wine is fermented with a small amount of French and American oak chips to stabilize color and act as an anti-oxidant as this keeps the yeast unstressed. Wine is pressed off before going dry and press juice is kept separate. After pressing, wines are racked to introduce oxygen, stabilize the color and remove gross lees. This Merlot exhibits typical cultivars style without the green herbaceous streak evident in so many Merlots. Careful handling, tannin management and lots of inert gas have helped us to make this wine without adding sulphur dioxide.

Stellar Live-a-Little Really Ravishing Red –South Africa.

The juice from this wine is drawn off after the de-stemmed grapes have been soaking in their own juices for about 6 hours. The wine is then cold settled racked and fermented cold. The grapes used were quite ripe so the rosé is a little on the dark side, but one taste will convince that it is indeed a fine dry rosé. It has clean nose and the taste reminds one of tart raspberries.

Stellar Live-a-Little Wildly Wicked White – South Africa.

Pale gold in color. The nose of the wine has delicate hints of spicy pears, tangerine and banana. On tasting, the Sauvignon Blanc component (30%) shows itself in the grassy tartness and lingering finish. The wine is well balanced with neither cultivar dominating.

Stellar Heaven on Earth – South Africa.

During the drying of the grapes on straw and Rooibos tea, the fragrance of the Rooibos infuses the grapes. We then gather the grapes, put them through the crusher and de-stemmer and soak them in their own juice, at low temperature, to re-hydrate the more raisined berries. The mash is then pressed, introduced to a Sauterne yeast and fermented in barrels until the yeast can go no further. The resultant nectar, a marriage of ripe Muscat, indigenous Rooibos and clean, airy skies, has captured and preserved the last golden Autumn days. The scents and flavors of apricot, honey and Rooibos offer a taste of Heaven right here on Earth.

Stellar Pinotage – South Africa.

A dark wine with a purple-red color. The wine has a satisfying earthy nose similar to the smell given off by hot bricks when ones lies on them after getting out of the swimming pool. The aromatics are a savory smokey muskiness and tinned black cherries the taste is rich and full with cinnamon and cake mix .The broad ripe tannins extend the mouth feel, which finishes with no bitterness. Enjoy with smoked salmon or a char grilled beef burger.

Stellar Cabernet Sauvignon - South Africa.

A large portion of the grapes used in this wine have their origin in our new cooler areas closer to the coast. This has given us better acids and ripeness at lower sugar levels. The grapes were cooled on crushing and cold-soaked for around two days before yeast inoculation. The yeast was chosen to maximize mouth feel and preserve fruit and color. The wine is pressed off after two thirds through the fermentation and press juice is kept separate. The wine exhibits characteristic Cabernet traits and has ripe tannins and no harsh edges.
